Stopped by Burt's to check on the Merlot. Did a punch down, took some measurements and had a taste. It's down to 8 brix, 3.46ph and has roughly .7% acidity.
It's all fresh fruit: blackberry, pear and rangpur lime. The acidity tastes about right. No raisiny/pruney taste and no hint of excessive tannin, which were my two worries. So far very happy...
He also opened an '07 Apricot wine. The nose is pure fresh apricot. It has a smooth glyceriny mouthfeel and features a medley of apricot, peach, pear, mandarin and lime zest. Excellent.
