I helped Burt bottle one of his wines prior to our pressing the Merlot. One the end of the siphon tube is a devise that when pressed down allows the wine to flow. When you withdraw the tube, just the right amount of wine had been displaced. We used a hand operated corker.
We then cleaned the carboys and used them for the Merlot.
